1 cup unprocessed oat bran

2 tbsp. wheat germ

cup all purpose unbleached flour

2 tsp. baking powder

1 tsp. pumpkin pie spice

1 tsp. cinnamon

tsp. nutmeg

tsp. salt

cup molasses

cup honey

1 cup canned pumpkin puree

cup skim milk

2 egg whites, lightly beaten

2 tbsp. egg substitute or  4 tbsp. applesauce

Full of important nutrients – and very little fat – these filling little muffins can help you wade your way through a diet.  At 127 calories and only 2 grams of fat you can eat them when you feel hungry and know that you are not cheating.

Preheat Oven To: 425

Yield: 1 dozen muffins

Preheat oven to 425.  In large bowl combine oat bran, wheat germ, flour, baking powder, pumpkin pie spice, cinnamon, nutmeg and salt. 

In medium bowl mix molasses, honey pumpkin puree, milk, egg white and egg substitute or applesauce.  Stir until well combined. 

Make a well in the center of the flour mixture and add pumpkin mixture slowly, blending well.

 Spray a 12-cup muffin tin with nonstick vegetable oil spray and spoon mixture into the cups until they are full.  Bake for 20 minutes or until toothpick inserted into center comes out clean.
